Paz' Gelato
🥘 Ingredients

whole milk1 cup

35% cream2.5 cup

vanilla extract2 tbsp

egg yolks3 large

1Heat the mixture: Heat the whole milk and 35% cream over medium heat until 85C, add vanilla extract . Remove from heat and let the vanilla steep for ⏱️ 30 minutes .whole milk: 1 cup, 35% cream: 2.5 cup, vanilla extract: 2 tbsp

2Make the custard: In a separate bowl, whisk the egg yolks and granulated sugar until pale and thick. Gradually pour the warm milk mixture into the egg mixture, whisking constantly.egg yolks: 3 large, granulated sugar: 1/2 cup

3Cook the custard: Return the mixture to the saucepan and cook over low heat, stirring constantly, until it thickens and coats the back of a spoon.

4Chill the mixture: Remove the vanilla pod (if used) and let the custard cool to room temperature. Cover and refrigerate for at least ⏱️ 4 hours or overnight.

5Churn the gelato: Pour the chilled mixture into an ice cream maker and churn according to the manufacturer’s instructions until it reaches a soft-serve consistency.

6Freeze the gelato: Transfer the gelato to an airtight container and freeze for at least ⏱️ 2 hours before serving.
